How to make Fruit cream crepes?
Make a smooth batter mixing maida, 1 egg, 2 tsp butter, 250 ml. Milk, vanilla essence and a pinch of salt. Heat a pan and smear with butter. Make thin large pancakes using spoonfuls of the batter. Cook both sides uniformly. Keep aside to cool (crepe) Blend remaining milk and eggs . Add vanilla, 1 tbsp sugar and boil it stirring continuously till it thickens. Remove from fire. After cooling, refrigerate for 1 hr. in the lower compartment . ( Custard) Make a thick syrup with 400g sugar. While it is hot add pineapple pieces and cook till it is done. Cool it, and add the remaining fruits. Chill for sometime. (fruit mix)
Keep aside half of custard and mix the remaining with fruit mix. This milk mixture should be very thick. Take a crepe, place 2 tbsp of milk mix on the center. Fold crepe in required shape to cover the milk mix. Place crepe at the center of the plate. And pour some chilled custard over it. Decorate with chopped nuts and cherries. Keep in fridge till you serve. (Do not freeze)
